Monday’s Menu Plan: August 17, 2009

I can’t believe that summer is technically over (based on the fact that school has started here in Nashville), but we’re experiencing some of the hottest days we’ve had all year! However, that means there’s still great nights for grilling ahead (even if that means just using the George Foreman inside). Yesterday we made our first family trip to the Nashville Farmer’s Market and I got a great sampling of fresh vegetables I’ve never tried before, like different kinds of zucchini, squash and eggplants, so you’ll see those mixed into the recipes this week! Enjoy!

Monday Strawberry Muffins (made with spinach from Deceptively Delicious)   Chicken Salad wraps with grapes   Homemade Pizza
Tuesday Cereal and Citrus slices   Cheese & cucumber sandwiches with veggie chips   Ham & Cheese Mini Fritattas and home fries

Recipes: Crepes

I had a request from a friend for my crepe recipe. My mom (who is British) taught me to make crepes from a very young age, to the extent that these are what I call “pancakes” (I can’t even eat a traditional buttermilk pancake!)
This recipe is from Alton Brown and I love putting it in the blender as it makes the batter so smooth.

2 eggs
¾ c Milk
½ c Water
1c All Purpose Flour
3T melted butter

Blend the above ingredients in a blender for 7-10 seconds

Heat a frying pan on med/high, melt a ¼ T of butter in the pan and pour about ¾ c of batter in the center of pan, then pick up the pan and twist in a circular motion to coat the entire pan (the first crepe never turns out well!). Repeat the process until all the batter is gone. Serve with syrup or more traditionally rolled up with sprinkled sugar and fresh lemon juice!

*Savory version
add ¼ t salt and ¼ c fresh herbs

*Dessert version
add 1t vanilla extract & 2 ½ T sugar, then let batter sit in fridge at least 1 hour

The Ultimate Cheesy Bread Bowl

My husband got this recipe from a friend he used to work with (thanks Brooke!) and now we can’t host an event without it! I detest mayonnaise, and I still love this appetizer.
The Ultimate Cheesy Bread Bowl
8 oz package softened cream cheese
1 c Hellman’s REAL mayonnaise (my husband refuses to let me buy anything else)
1/8 tsp of ground while pepper
1/8 tsp of garlic salt
10-12 oz of shredded extra sharp white cheddar cheese
Round loaf of White Mountain Bread
Cut a circle in top of bread and hollow out the top to create a large bread bowl. Take top of bread and pull into chunks and set aside.
Combine first four ingredients in medium size bowl and mix well. Add cheese to mixture.
Pour cheese mixture into hollowed out bread bowl. Bake on a cookie sheet at 400 degrees for 30-45 minutes (until bubbly with brown edges). If desired, scatter chunks of bread around the bread bowl on the cookie sheet during the last five minutes of cooking. Serve immediately and wait for compliments to the chef 🙂
